Ingredients

For the Malpua batter:

  • Karela (Bitter Gourd) – 500 grams
  • Aamchoor (Dried Mango Powder) – 2 tablespoons
  • Onion – 1 large, chopped
  • Garlic – 3-4 cloves, chopped
  • Ginger – 1-inch piece, chopped
  • Green chili – 1, chopped
  • Cumin seeds – 1 teaspoon
  • Coriander powder – 1 tablespoon
  • Turmeric powder – 1/2 teaspoon
  • Red chili powder – 1/2 teaspoon
  • Salt – 1 teaspoon (or as per taste)
  • Mustard oil – 2 tablespoons

Instructions:

  • Begin by soaking the walnuts in water for 2-3 hours. After soaking, drain the water and let the walnuts dry completely. Once dry, grind the walnuts in a food processor until they become a fine powder.
  • In a heavy-bottomed pan, add the ghee and let it melt. Once the ghee is melted, add the walnut powder and roast it for 5-7 minutes on medium heat. Make sure to continuously stir the mixture to avoid burning.
  • After 5-7 minutes, add the milk and stir the mixture. Continue stirring until the milk is fully absorbed and the mixture starts to thicken.
  • Once the mixture has thickened, add the sugar and cardamom powder, and continue stirring for another 10-15 minutes until the mixture becomes a thick paste. The sugar will melt and the mixture will become glossy.
  • Turn off the heat and let the mixture cool down for a few minutes. Once cooled, transfer the mixture to a greased plate or a container and let it cool down completely.
  • Once cooled, cut the walnut halwa into desired shapes and garnish with saffron strands and chopped nuts.
