For the Malpua batter:

  • Karela (Bitter Gourd) – 500 grams
  • Aamchoor (Dried Mango Powder) – 2 tablespoons
  • Onion – 1 large, chopped
  • Garlic – 3-4 cloves, chopped
  • Ginger – 1-inch piece, chopped
  • Green chili – 1, chopped
  • Cumin seeds – 1 teaspoon
  • Coriander powder – 1 tablespoon
  • Turmeric powder – 1/2 teaspoon
  • Red chili powder – 1/2 teaspoon
  • Salt – 1 teaspoon (or as per taste)
  • Mustard oil – 2 tablespoons


  • Begin by soaking the walnuts in water for 2-3 hours. After soaking, drain the water and let the walnuts dry completely. Once dry, grind the walnuts in a food processor until they become a fine powder.
  • In a heavy-bottomed pan, add the ghee and let it melt. Once the ghee is melted, add the walnut powder and roast it for 5-7 minutes on medium heat. Make sure to continuously stir the mixture to avoid burning.
  • After 5-7 minutes, add the milk and stir the mixture. Continue stirring until the milk is fully absorbed and the mixture starts to thicken.
  • Once the mixture has thickened, add the sugar and cardamom powder, and continue stirring for another 10-15 minutes until the mixture becomes a thick paste. The sugar will melt and the mixture will become glossy.
  • Turn off the heat and let the mixture cool down for a few minutes. Once cooled, transfer the mixture to a greased plate or a container and let it cool down completely.
  • Once cooled, cut the walnut halwa into desired shapes and garnish with saffron strands and chopped nuts.
  • Your delicious walnut halwa is ready to serve! Enjoy it as a dessert after a meal or as a snack any time of the day.
  • Wash the Karela (bitter gourd) under running water and pat dry with a kitchen towel. Cut the Karela into thin round slices and remove the seeds.
  • In a bowl, sprinkle 1 teaspoon of salt over the Karela slices and mix well. Leave the Karela slices aside for 15-20 minutes. This will help to remove the bitter taste of the Karela.
  • After 20 minutes, squeeze out the excess water from the Karela slices and wash them again under running water. Squeeze out the excess water again and keep the Karela slices aside.
  • In a pan, heat the mustard oil on medium heat. Add the cumin seeds and let them crackle.
  • Add the chopped garlic, ginger, and green chili to the pan and sauté for a minute.

  • Add the coriander powder, turmeric powder, red chili powder, and Aamchoor powder to the pan and mix well.

  • Cover the pan and cook for another 10-12 minutes on low heat until the Karela is tender and cooked through.
  • Garnish with fresh coriander leaves and serve hot with roti or rice.


  • To reduce the bitterness of the Karela, you can also add a little bit of sugar or jaggery while cooking.
  • If you don’t have Aamchoor powder, you can substitute it with lemon juice or tamarind pulp.
