  • 4 cups whole milk
  • 1 cup condensed milk
  • 1/2 cup sugar
  • 1/4 cup finely chopped almonds and pistachios
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands
  • 2 tablespoons chopped dried fruits (optional)
  • 4-6 earthen pots (matkas) or popsicle molds
  • Wooden sticks for serving (if using molds)


  • In a thick-bottomed pan, pour the whole milk and place it over medium heat. Let the milk come to a gentle boil while stirring occasionally to prevent it from sticking to the bottom of the pan.
  • Once the milk starts boiling, reduce the heat to low and continue cooking. Keep stirring occasionally to avoid forming a layer of cream on top.
  • Meanwhile, soak the saffron strands in 1 tablespoon of warm milk. Let it infuse for a few minutes until the milk turns a beautiful golden color.
  • After simmering the milk for about 30 minutes, you will notice it has reduced to approximately half its original quantity. At this stage, add the sugar, condensed milk, cardamom powder, chopped nuts, and soaked saffron (along with the milk) to the pan. Mix well.
  • Continue to cook the mixture on low heat for another 15-20 minutes, stirring frequently. This will allow the flavors to blend and the mixture to thicken.
  • Once the mixture reaches a thick and creamy consistency, turn off the heat and let it cool to room temperature.
  • While the mixture is cooling, prepare your matkas or popsicle molds. If using matkas, wash them thoroughly and dry them well. If using molds, rinse them with cold water.
  • Once the mixture has cooled, pour it into the matkas or molds, leaving a little space at the top for expansion. If using molds, insert wooden sticks into each cavity.
  • Place the matkas or molds in the freezer and let them set for at least 6 hours or overnight. This will ensure the kulfi freezes properly and attains its characteristic texture.
  • After the kulfi has completely frozen, remove the matkas from the freezer and let them sit at room temperature for a few minutes. This will make it easier to remove the kulfi from the pots.
  • For matkas, gently tap them on the kitchen counter to loosen the kulfi, then carefully slide a butter knife along the edges to remove it. If using molds, hold them under warm water for a few seconds to loosen the kulfi, then gently pull on the wooden sticks to remove them..
