Ingredients

For the dough:

  • 2 cups whole wheat flour
  • Salt to taste
  • Water as required

For the stuffing:

  • 1 cup crumbled paneer
  • 2 tbsp mustard oil
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 1 tsp coriander seeds
  • 1 tsp nigella seeds
  • 1 tsp fenugreek seeds
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • Salt to taste
  • 2 tbsp chopped coriander leaves

Method:

  • To make the dough, take 2 cups of whole wheat flour in a mixing bowl. Add salt to taste and mix well.
  • Gradually add water to the flour mixture and knead it into a soft dough. Cover it with a damp cloth and keep it aside for 15 minutes.
  • In the meantime, prepare the stuffing for the parathas. Heat 2 tbsp of mustard oil in a pan.
  • Add 1 tsp each of cumin seeds, fennel seeds, coriander seeds, nigella seeds, and fenugreek seeds. Sauté them for a few seconds until they crackle.
  • Add 1 tsp of red chili powder, 1 tsp of turmeric powder, and salt to taste. Mix well.
  • Add 1 cup of crumbled paneer to the mixture and mix well.
  • Finally, add 2 tbsp of chopped coriander leaves and mix well. Turn off the flame and let the stuffing cool down.
  • Divide the dough into small lemon-sized balls. Take one ball and roll it into a small circle of 3 inches in diameter.
  • Place 1-2 tbsp of the stuffing mixture in the center of the circle.
  • Bring the edges of the dough together to cover the stuffing and seal it properly.
  • Dust some flour on the stuffed dough ball and gently roll it into a circle of around 6 inches in diameter.
  • Heat a tawa or a flat pan on medium-high heat. Place the rolled paratha on the tawa.
  • Cook the paratha for 30 seconds on one side until small bubbles appear on the surface.
  • Flip the paratha and cook the other side for 30 seconds as well.
  • Now, apply some oil or ghee on both sides of the paratha and cook it for another 30-40 seconds on each side or until it turns golden brown in color.
  • Repeat the same process with the remaining dough balls and stuffing mixture.
