Ingredients

For the dough:

  • 2 cups all-purpose flour (maida)
  • 2 tablespoons semolina (suji)
  • 1 teaspoon ajwain (carom seeds)
  • 1 teaspoon kalonji (nigella seeds)
  • 1 teaspoon salt
  • 4 tablespoons ghee (clarified butter)
  • Water (as needed)

For frying:

  • Oil for deep frying

For the spice mix:

  • 1 teaspoon red chili powder
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon chaat masala
  • Salt to taste

Instructions:

  • In a large mixing bowl, combine the all-purpose flour, semolina, ajwain, kalonji, and salt. Mix well.
  • Add ghee to the dry ingredients and mix it in using your fingertips. The mixture should resemble coarse breadcrumbs.
  • Gradually add water, a little at a time, and knead to form a firm dough. Make sure the dough is not too soft or too hard. Cover the dough with a damp cloth and let it rest for 15-20 minutes.
  • Meanwhile, prepare the spice mix by combining red chili powder, roasted cumin powder, chaat masala, and salt in a small bowl. Set aside.
  • After the resting time, divide the dough into small portions and roll each portion into a thin sheet. You can use a rolling pin and some dry flour to prevent sticking.
  • Using a knife or a pizza cutter, cut the rolled dough into small diamond or square shapes. You can also use a cookie cutter for different shapes if desired.
  • Heat oil in a deep pan or kadai over medium heat. To check if the oil is hot enough, drop a small piece of dough into the oil. If it rises to the surface immediately without changing color, the oil is ready for frying.
  • Gently slide a few nimki pieces into the hot oil and fry them until they turn golden brown and crispy. Fry them in batches to avoid overcrowding the pan.
  • Once the nimki is fried, remove it from the oil using a slotted spoon and drain excess oil on a paper towel.
  • While the nimki is still hot, sprinkle the prepared spice mix over it, ensuring that each piece is coated well. Toss them gently to distribute the spices evenly.
  • Repeat the frying and seasoning process for the remaining nimki batches.
  • Allow the nimki to cool completely before storing them in an airtight container. They will stay fresh for up to 2 weeks.
