How To make Ajwain Aur Kalonji Ki Nimki? | Instant Ajwain Aur Kalonji Ki Nimki Recipe

Ajwain Aur Kalonji Ki Nimki Recipe

Nimki is a popular Indian snack that is loved by people of all ages. It is crispy, savory, and perfect to munch on with a cup of tea or as a party snack. In this recipe, we will add a twist to the traditional nimki by incorporating ajwain (carom seeds) and kalonji (nigella seeds). The combination of these aromatic seeds adds a delightful flavor and enhances the overall taste of the nimki. So, let’s get started!

Here is a breakfast recipe that is easy to prepare and delicious to eat.

For the dough:

  • 2 cups all-purpose flour (maida)
  • 2 tablespoons semolina (suji)
  • 1 teaspoon ajwain (carom seeds)
  • 1 teaspoon kalonji (nigella seeds)
  • 1 teaspoon salt
  • 4 tablespoons ghee (clarified butter)
  • Water (as needed)

For frying:

  • Oil for deep frying

For the spice mix:

  • 1 teaspoon red chili powder
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon chaat masala
  • Salt to taste

  • In a large mixing bowl, combine the all-purpose flour, semolina, ajwain, kalonji, and salt. Mix well.
  • Add ghee to the dry ingredients and mix it in using your fingertips. The mixture should resemble coarse breadcrumbs.
  • Gradually add water, a little at a time, and knead to form a firm dough. Make sure the dough is not too soft or too hard. Cover the dough with a damp cloth and let it rest for 15-20 minutes.
  • Meanwhile, prepare the spice mix by combining red chili powder, roasted cumin powder, chaat masala, and salt in a small bowl. Set aside.
  • After the resting time, divide the dough into small portions and roll each portion into a thin sheet. You can use a rolling pin and some dry flour to prevent sticking.
  • Using a knife or a pizza cutter, cut the rolled dough into small diamond or square shapes. You can also use a cookie cutter for different shapes if desired.
  • Heat oil in a deep pan or kadai over medium heat. To check if the oil is hot enough, drop a small piece of dough into the oil. If it rises to the surface immediately without changing color, the oil is ready for frying.
  • Gently slide a few nimki pieces into the hot oil and fry them until they turn golden brown and crispy. Fry them in batches to avoid overcrowding the pan.
  • Once the nimki is fried, remove it from the oil using a slotted spoon and drain excess oil on a paper towel.
  • While the nimki is still hot, sprinkle the prepared spice mix over it, ensuring that each piece is coated well. Toss them gently to distribute the spices evenly.
  • Repeat the frying and seasoning process for the remaining nimki batches.
  • Allow the nimki to cool completely before storing them in an airtight container. They will stay fresh for up to 2 weeks.
  • Your delicious Ajwain Aur Kalonji Ki Nimki is ready to be enjoyed! Serve it as a snack with tea or coffee, or pack it in your kids’ lunchboxes. The crunchy texture and aromatic flavors of ajwain and kalonji will surely leave everyone wanting more.
  • Note: You can adjust the spice level according to your preference by adding more or less chili powder. Additionally, feel free to experiment with other spices or herbs to create your own unique variation of nimki.

Enjoy your homemade nimki and savor the delightful blend of flavors!
