Ingredients

For Paneer Kofta:

  • 250 grams paneer (cottage cheese), grated
  • 2 boiled potatoes, mashed
  • 2 green chillies, finely chopped
  • 1 tsp ginger paste
  • 2 tbsp cornflour

  • Oil for frying

For Ajwaini Paneer Kofta Curry:

  • 3 tbsp oil
  • 1 tsp cumin seeds
  • 1 tsp ajwain (carom seeds)
  • 2 onions, finely chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 2 tomatoes, finely chopped
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp garam masala powder
  • Salt to taste
  • 1 cup water
  • 2 tbsp chopped coriander leaves

Instructions:

  • To prepare the Paneer Kofta, take a mixing bowl and add grated paneer, mashed potatoes, chopped green chillies, ginger paste, cornflour, and salt. Mix all the ingredients together to form a smooth mixture.
  • Divide the mixture into small portions and shape them into round balls. Make sure there are no cracks in the balls.
  • Heat oil in a kadhai or deep-frying pan. Once the oil is hot, gently slide the paneer balls into the oil and fry them on medium heat till they turn golden brown. Drain the koftas on a paper towel to remove excess oil.
  • To make the Ajwaini Paneer Kofta Curry, heat oil in a pan and add cumin seeds and ajwain. Once they crackle, add finely chopped onions and sauté until they turn translucent.
