Ingredients

  • 1 cup almond flour
  • 1 cup amaranth flour
  • 1/2 cup jaggery powder
  • 1/4 cup ghee
  • 1/4 cup chopped almonds
  • 1/4 tsp cardamom powder
  • 1-2 tbsp milk (if needed)

Method:

  • Begin by dry roasting the almond flour and amaranth flour separately in a pan over medium heat. Keep stirring continuously for 5-7 minutes, or until the flours become fragrant and lightly toasted. Set them aside to cool.
  • In the same pan, heat ghee and jaggery powder over low heat until the jaggery melts and the mixture becomes smooth. Add the toasted almond and amaranth flour to the pan and mix well.
  • Keep stirring the mixture on low heat for 5-7 minutes, or until the mixture comes together to form a dough-like consistency. If the mixture is too dry, add 1-2 tbsp of milk and mix well.
  • Add the chopped almonds and cardamom powder to the mixture and mix well. Turn off the heat and let the mixture cool down for a few minutes.
  • Once the mixture has cooled down enough to handle, take a small portion of the mixture and roll it into a ball. Repeat this process with the remaining mixture.
  • Let the ladoos cool completely before serving. You can store them in an airtight container at room temperature for up to a week.

Tips

  • If you don’t have almond flour or amaranth flour, you can make them at home by grinding whole almonds and amaranth seeds in a blender until they turn into a fine powder.
  • You can also add other nuts and seeds like cashews, walnuts, pumpkin seeds, or sesame seeds to the mixture for added nutrition and flavor.
  • Make sure to keep stirring the mixture continuously while roasting the flours and cooking the ladoos to prevent burning or sticking to the pan.
