  •  ½ tsp red chili powder (lal mirch)
  •  1 tsp cumin powder (jeera)
  •  ½ tsp coriander powder (dhaniya)
  •  Salt to taste
  •  ½ cup water
  • For the Filling:
  •  2-3 medium-sized boiled potatoes, mashed
  •  1 small onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds (jeera)
  • ½ tsp turmeric powder (haldi)
  • 1 tsp red chili powder (lal mirch)
  • 1 tsp coriander powder (dhaniya)
  • Salt to taste
  • Oil for frying

For Garnishing:

  • Fresh coriander leaves, finely chopped
  • Mint chutney
  • Tamarind chutney

  • To prepare the batter, take a mixing bowl and add gram flour, turmeric powder, red chili powder, cumin powder, coriander powder, and salt to taste.
  • Mix well and add water to the mixture. Whisk it until you get a smooth and lump-free batter.
  • Keep the batter aside for 10-15 minutes.
  • Meanwhile, prepare the filling. In a pan, heat oil and add cumin seeds. Let it splutter.
  • Add chopped onions and green chilies to the pan and sauté for 2-3 minutes.
  • Add ginger-garlic paste and sauté for another minute.
  • Add mashed potatoes, turmeric powder, red chili powder, coriander powder, and salt to taste. Mix well and cook for 3-4 minutes.
  • Take the mixture off the heat and let it cool for some time.
  • Once the filling is cool, make small balls out of it.
  • Heat oil in a deep pan for frying.
  • Dip the potato balls in the gram flour batter and coat them well.
  • Fry the coated balls in the hot oil until they turn golden brown and crispy.
  • Take the jalebis out of the pan and place them on a tissue paper to drain the excess oil.
  • Garnish the aloo ki jalebis with finely chopped fresh coriander leaves.
  • Serve hot with mint chutney and tamarind chutney.

  • If you want the jalebis to be crispy, make sure the batter is not too thick or too thin.
  • You can also add other spices like garam masala or amchur powder to the filling for a different flavor.
  • You can also make the filling with boiled peas, carrots, or mixed vegetables.
  • To make the jalebis healthier, you can shallow fry them instead of deep-frying.

Aloo ki Jalebi is a tasty and delicious snack that can be made easily at home. The crispy and crunchy texture of the snack makes it a favorite among all age groups. You can experiment with different spices and vegetables to make your own version of the snack. Serve it hot with mint chutney and tamarind chutney for a perfect tea-time snack.
