  • Handful of fresh coriander leaves, finely chopped
  • Juice of half a lemon (optional)

Instructions:

  • Start by rinsing the poha in a colander under running water for a few seconds. Drain the excess water and set it aside for 10-15 minutes, allowing it to soak and soften.
  • In a large non-stick pan or wok, heat the oil on medium flame. Once the oil is hot, add the cumin seeds, mustard seeds, and asafoetida. Let them splutter for a few seconds.
  • Add the chopped onions and green chillies to the pan and sauté for 2-3 minutes until the onions turn translucent.
  • Add the chopped potatoes to the pan and mix well. Cook for 5-6 minutes until the potatoes are soft and slightly golden in color.
  • Add the turmeric powder, red chilli powder, and salt to the pan and mix well. Cook for another minute.
  • Add the soaked poha to the pan and mix well with the potato mixture. Be gentle while mixing so as not to break the poha.
  • Cover the pan and cook for 3-4 minutes on low flame until the poha is heated through and all the flavors have melded together.
  • Garnish the Aloo Poha with chopped coriander leaves and drizzle lemon juice on top if desired. Serve hot with a cup of tea or coffee.

Tips

  • You can also add chopped peanuts or cashews to the Aloo Poha for some crunch and texture.
