Amritsari Chicken Masala is a popular North Indian dish known for its rich and flavorful spices. It originates from the city of Amritsar in Punjab, India. This recipe serves four people.

Here is a breakfast recipe that is easy to prepare and delicious to eat.

Ingredients

For marinating the chicken:

  • 500 grams boneless chicken, cut into bite-sized pieces
  • 2 tablespoons yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • Salt to taste

For the masala:

  • 3 tablespoons oil or ghee (clarified butter)
  • 1 teaspoon cumin seeds
  • 2 medium onions, finely chopped
  • 2 medium tomatoes, finely chopped
  •  2 green chilies, slit lengthwise
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon Amchur (dried mango powder)
  • 1 tablespoon coriander powder
  • 1 tablespoon cumin powder
  • 1 teaspoon garam masala
  • 1 teaspoon Kashmiri red chili powder (for color, optional)
  • Salt to taste
  • Fresh coriander leaves for garnishing

Instructions:

  • In a bowl, add the boneless chicken pieces along with yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Mix well, ensuring that the chicken is coated with the marinade. Cover the bowl and let it marinate in the refrigerator for at least 1 hour or overnight for best results.
  • Heat oil or ghee in a pan on medium heat. Add cumin seeds and let them splutter.
  • Add finely chopped onions to the pan and sauté until they turn golden brown. This may take about 8-10 minutes.
  • Now, add ginger-garlic paste and green chilies to the pan. Sauté for a minute until the raw aroma of ginger-garlic disappears.
  • Add the chopped tomatoes and cook until they become soft and mushy. Stir occasionally to prevent sticking to the bottom of the pan.
  • Once the tomatoes are cooked, add the dry spices – Amchur (dried mango powder), coriander powder, cumin powder, garam masala, Kashmiri red chili powder (if using), and salt. Mix well and cook for 2-3 minutes to allow the spices to release their flavors.
  • Now, add the marinated chicken to the pan and mix it with the masala. Increase the heat to medium-high and cook for about 5 minutes, stirring occasionally, until the chicken is slightly browned.
  • Reduce the heat to low, cover the pan with a lid, and let the chicken cook for about 15-20 minutes or until it becomes tender and cooked through. Stir occasionally to prevent sticking.
  • Once the chicken is cooked, remove the lid and cook for an additional 5 minutes on medium heat to let the gravy thicken.
  • Garnish the Amritsari Chicken Masala with freshly chopped coriander leaves.
