Anjeer Kaju Roll is a delicious Indian dessert made with dried figs and cashews. It is a perfect dessert for any special occasion or festival. In this recipe, we will make the filling with dried figs and cashews, and then wrap it in a layer of thinly rolled out khoya or mawa.

  • 1 cup dried figs (anjeer)
  • 1 cup cashews (kaju)
  • 1/2 cup powdered sugar
  • 1/2 tsp cardamom powder (elaichi powder)

For the outer layer

  • 500 gm khoya or mawa
  • 1/4 cup powdered sugar
  • A few drops of rose water


  • Firstly, take 1 cup of dried figs and soak them in warm water for 15-20 minutes. Drain the water and finely chop the figs.
  • In a pan, dry roast 1 cup of cashews on low heat until they turn golden brown. Remove the cashews from the pan and let them cool.
  • Once the cashews have cooled, grind them in a food processor or mixer grinder until they turn into a fine powder.
  • In the same mixer or food processor, add the chopped figs and grind them until they are finely chopped.
  • Now, take a pan and add the figs and cashews mixture along with 1/2 cup of powdered sugar. Cook on low heat until the mixture thickens and comes together like a dough.
  • Add 1/2 tsp of cardamom powder to the mixture and mix well. Turn off the heat and let the mixture cool.
  • In another pan, crumble 500 gm of khoya or mawa and cook it on low heat until it melts and turns into a smooth paste.
  • Once the khoya has melted, add 1/4 cup of powdered sugar and a few drops of rose water to it. Mix well and turn off the heat.
  • Take a large plate and grease it with ghee or oil. Transfer the khoya mixture to the plate and let it cool slightly.
  • Once the khoya has cooled down, knead it for a few minutes until it becomes smooth and pliable.
  • Divide the khoya into equal-sized portions and roll each portion into a thin circle.
  • Place a spoonful of the fig and cashew mixture in the center of the khoya circle.
  • Roll the khoya circle around the filling and press the edges to seal it.
  • Repeat the process with the remaining khoya and filling to make more rolls.
  • Once all the rolls are made, refrigerate them for 15-20 minutes until they set.
  • Once the rolls have set, cut them into small pieces and serve.
