  • 2 cups almonds (badaam)
  • 1 cup milk
  • 1 cup sugar
  • 1/2 cup ghee (clarified butter)
  • 1/2 teaspoon cardamom powder
  • A few strands of saffron (optional)
  • Chopped pistachios for garnish


  • Begin by blanching the almonds. Bring a pot of water to a boil and add the almonds to it. Let them boil for about 2-3 minutes. Drain the hot water and transfer the almonds to a bowl of cold water. Let them sit for a couple of minutes, then peel off the skin. Pat dry the almonds using a clean kitchen towel.
  • Once the almonds are dry, grind them into a fine powder using a blender or food processor. You can also use a mortar and pestle to manually grind the almonds, but it will take more time and effort.
  • In a heavy-bottomed pan, heat the ghee over medium heat. Add the almond powder and sauté it in the ghee for about 3-4 minutes until it releases a nice aroma.
  • Gradually add the milk to the pan while stirring continuously to avoid any lumps. Keep stirring and cook the mixture until it thickens. This will take approximately 10-12 minutes. The mixture should start leaving the sides of the pan.
  • Now, add the sugar to the pan and mix well. Continue cooking the mixture on low heat until it thickens further and starts to come together like a dough. This will take another 10-12 minutes.
  • At this stage, add the cardamom powder and saffron strands (if using) to the mixture. Mix well to incorporate the flavors evenly.
  • Grease a square or rectangular tray with ghee. Transfer the barfi mixture to the greased tray and spread it evenly using a spatula or the back of a spoon. You can also garnish the top with some chopped pistachios for added flavor and presentation.
  • Allow the barfi to cool down completely at room temperature. Once cooled, refrigerate it for at least 2-3 hours to set properly.
  • After the barfi has set, remove it from the refrigerator and cut it into small diamond-shaped or square pieces using a sharp knife.
  • Your delicious badaam ki barfi is now ready to be served! Enjoy the rich and creamy almond flavor with your family and friends.
