Ingredients

  • 1 liter full-fat milk
  • 1/2 cup almonds, soaked and peeled
  • 1/2 cup sugar
  • 1/4 cup gulkand (rose petal jam)
  • 1/4 teaspoon cardamom powder
  • 1 tablespoon cornflour
  • 2 tablespoons milk powder
  • 2 tablespoons fresh cream
  • A pinch of saffron strands
  • Kulfi molds or small plastic cups
  • Wooden sticks or ice cream sticks

Method:

  • First, soak the almonds in water for 4-5 hours. After that, remove the skin by gently rubbing them between your fingers. Rinse them once again and keep them aside.
  • In a heavy-bottomed pan, pour the milk and bring it to a boil. Once it starts boiling, reduce the flame to low and let it simmer until it reduces to half its original quantity. Keep stirring occasionally to prevent it from sticking to the bottom of the pan.
  • While the milk is simmering, grind the soaked and peeled almonds into a fine paste using a blender. Keep it aside.
  • Once the milk is reduced to half, add sugar and stir it until it dissolves completely. Then, add the almond paste and mix it well. Let it simmer for another 5-7 minutes.
  • In a small bowl, mix cornflour and milk powder with 2 tablespoons of water to make a smooth paste. Add this paste to the milk mixture and stir it continuously to avoid lumps.
  • Now, add the gulkand, cardamom powder, saffron strands, and fresh cream to the milk mixture. Mix it well and let it simmer for another 5-7 minutes.
  • Turn off the flame and let the mixture cool down completely. Once it is cooled, pour it into kulfi molds or small plastic cups.
  • Insert wooden sticks or ice cream sticks into each mold and freeze them for at least 6-8 hours or overnight.
  • Once the kulfi is completely frozen, take it out of the mold by dipping it in warm water for a few seconds. Then, gently pull the kulfi out by holding the stick.
  • Serve the Badam Aur Gulkand Ki Kulfi chilled and enjoy the rich and creamy flavors.

  • You can use any type of milk for this recipe, but full-fat milk gives a richer and creamier taste.
  • Adjust the sugar quantity according to your taste preference.
