Ingredients

  • 1 cup almonds
  • 1 cup sugar

Instructions:

  • Begin by soaking the almonds in hot water for about 2 hours. This will help in removing the skin easily. After soaking, drain the water and peel the skin off each almond. Pat them dry using a kitchen towel.
  • Take the peeled almonds and grind them into a fine powder using a blender or food processor. You can leave a few almonds aside for garnishing later if you prefer.
  • Heat a thick-bottomed pan or a non-stick kadai on medium heat and add ghee to it. Allow the ghee to melt completely.
  • Once the ghee has melted, add the almond powder to the pan. Stir the mixture continuously to prevent it from sticking to the bottom of the pan. Roast the almond powder in ghee for about 8-10 minutes until it turns light golden brown in color and releases a fragrant aroma.
  • In a separate saucepan, heat milk until it comes to a gentle boil. Add the boiled milk to the roasted almond powder and stir well to combine. The mixture will thicken as the milk gets absorbed.
  • Now, add sugar to the pan and mix it thoroughly with the almond mixture. The sugar will dissolve in the heat and combine with the almonds and milk.
  • Continue cooking the mixture on low heat, stirring constantly to avoid lumps and sticking. The halwa will thicken further as it cooks. This process can take around 15-20 minutes.
  • As the halwa thickens, add cardamom powder and saffron strands (if using). These spices add a wonderful aroma and flavor to the halwa.
  • Keep stirring the halwa until it starts leaving the sides of the pan and becomes glossy. This indicates that the halwa is cooked and ready to be served. Turn off the heat.
