How To make Badam Ki Phirni? | Instant Badam Ki Phirni Recipe

Badam ki Phirni is a classic Indian dessert that is usually prepared during festivals or special occasions. It is a rice pudding made with ground almonds and flavored with cardamom and saffron.

Here is a step-by-step recipe for making Badam ki Phirni at home.

  • Rice – 1/2 cup
  • Milk – 1 litre
  • Almonds (Badam) – 1/2 cup
  • Sugar – 1/2 cup
  • Cardamom (Elaichi) – 4-5 pods, crushed
  • Saffron (Kesar) – a few strands
  • Pistachios – for garnishing

  • Wash and soak the rice in water for at least 30 minutes. Drain the water and grind the rice into a fine powder in a mixer or blender.
  • Soak the almonds in hot water for about 15 minutes. Remove the skin and grind the almonds into a fine paste in a mixer or blender. You can also use almond flour instead of grinding the almonds at home.
  • Heat the milk in a heavy-bottomed pan and bring it to a boil. Reduce the heat to low and let it simmer for about 10-15 minutes.
  • Add the ground rice to the milk and mix well. Keep stirring continuously to prevent the rice from sticking to the bottom of the pan.
  • Add the almond paste and mix well. Keep stirring until the mixture thickens and becomes creamy.
  • Add the sugar, crushed cardamom pods, and saffron strands to the mixture and stir well.
  • Cook for another 5-10 minutes until the sugar dissolves and the mixture thickens further.
  • Remove from heat and let the mixture cool down to room temperature.
  • Pour the mixture into small earthen pots or bowls and refrigerate for at least 2-3 hours until it sets.
  • Garnish with chopped pistachios before serving.

  • Use whole milk for a creamy texture. You can also use a combination of milk and cream for a richer taste.
  • Soak the rice for at least 30 minutes before grinding it into a powder. This will make it easier to blend and give the Phirni a smooth texture.
  • Use freshly ground cardamom powder for a more aromatic flavor.
  • You can use rose water or kewra water instead of saffron for a different flavor.
  • Serve the Phirni chilled for a refreshing taste.
  • Badam ki Phirni is a rich and indulgent dessert that is sure to impress your guests. With its creamy texture and nutty flavor, it is the perfect end to any meal. So why not try making it at home and enjoy this delicious dessert with your family and friends!
