For the Eggs:

  • 4 Eggs
  • Water
  •  Salt
  • Vinegar

For the Masala:

  • 2 tbsp Oil
  • 1 tsp Mustard Seeds
  • 1 tsp Cumin Seeds
  • 1 Onion, chopped
  • 1 Tomato, chopped
  • 2 Green Chillies, slit
  • 1 tsp Ginger-Garlic Paste
  • 1/2 tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • 1 tsp Coriander Powder
  • 1/2 tsp Cumin Powder
  • Salt to taste
  • 1/2 cup Coconut Milk
  • 1 tsp Garam Masala
  • Coriander leaves, chopped (for garnishing)


  • Step 1: Boil the Eggs

Start by boiling the eggs. To do this, place the eggs in a pot of cold water and bring it to a boil. Once it starts boiling, add a pinch of salt and a teaspoon of vinegar to prevent the eggs from cracking. Lower the heat and let the eggs simmer for 10 minutes.

After 10 minutes, remove the pot from the heat and drain the hot water. Transfer the eggs to a bowl of cold water and let them cool down for a few minutes. Once cooled, peel the eggs and set them aside.

  • Step 2: Prepare the Masala

To make the masala, heat 2 tablespoons of oil in a pan over medium heat. Once the oil is hot, add a teaspoon of mustard seeds and a teaspoon of cumin seeds. Let them splutter for a few seconds.

Add the turmeric powder, red chilli powder, coriander powder, cumin powder, and salt to taste. Mix well and cook for a minute or two until the masala starts to release oil.

Once the masala is cooked, add half a cup of coconut milk and mix well. Let the gravy simmer for 2-3 minutes until it thickens.

  • Step 4: Add Boiled Eggs

Now, it’s time to add the boiled eggs to the gravy. Slice the eggs in half lengthwise and place them in the pan, cut side down. Gently spoon the gravy over the eggs and let it cook for a minute or two.
