Ingredients

For the Rice:

  • 2 cups basmati rice
  • 4 cups water
  • 2 bay leaves
  • 4 green cardamom pods
  • 1 cinnamon stick
  • 2 teaspoons salt

For the Masala:

  • 2 tablespoons oil
  • 1 onion, chopped
  • 2 teaspoons ginger paste
  • 2 teaspoons garlic paste
  • 2 green chilies, chopped
  • 1 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 2 teaspoons cumin powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon salt
  • 1 cup yogurt
  • 1/2 cup chopped mint leaves
  • 1/2 cup chopped cilantro leaves
  • 1 kg chicken, cut into small pieces

For the Bamboo:

  • 2-3 large bamboo stems
  • Aluminum foil

Method:

  • Soak the basmati rice in water for at least 30 minutes. This will help the rice cook evenly and prevent it from sticking together.
  • In a large pot, bring 4 cups of water to a boil. Add the bay leaves, green cardamom pods, cinnamon stick, and salt. Stir well.
  • Drain the soaked rice and add it to the boiling water. Stir well and reduce the heat to low. Cover the pot and let the rice cook for 15-20 minutes, or until it is fully cooked.
  • While the rice is cooking, prepare the masala. In a large pan, heat the oil over medium heat. Add the chopped onions and fry until they turn golden brown.
  • Add the ginger paste, garlic paste, and green chilies to the pan. Fry for 1-2 minutes.
  • Add the turmeric powder, coriander powder, cumin powder, garam masala powder, and salt. Mix well.
  • Add the chicken pieces to the pan and stir well to coat them with the masala. Fry for 5-7 minutes, or until the chicken is cooked through.
  • Add the yogurt, mint leaves, and cilantro leaves to the pan. Stir well and cook for 2-3 minutes.
  • Preheat the oven to 350°F (180°C). Cut the bamboo stems into 8-10 inch sections and remove any rough edges. Clean the inside of the bamboo stems with a cloth.
  • Wrap each section of bamboo with aluminum foil, leaving one end open.
  • Spoon the cooked rice into the bamboo sections, filling them up to about 1/3 of the way. Add a layer of the chicken masala on top of the rice, filling it up to about 2/3 of the way.
  • Add another layer of rice on top of the chicken masala, filling the bamboo to the top. Pack the rice down firmly.
  • Cover the open end of the bamboo with aluminum foil.
  • Place the bamboo sections in a baking dish and bake in the preheated oven for 30-40 minutes.
  • Remove the bamboo sections from the oven and carefully unwrap the aluminum foil. Serve the bamboo biryani hot with raita or cucumber salad.
