How To make Basanti Pulao? | Instant Basanti Pulao Recipe

Basanti Pulao is a popular dish in the eastern region of India. It is a delicious and aromatic rice dish that is made with a variety of vegetables and spices. Basanti Pulao is also known as Holud Pulao or Yellow Pulao due to the presence of turmeric, which gives it a bright yellow color.

Here is a step-by-step recipe for making Basanti Pulao at home.

Ingredients

  • 2 cups Basmati Rice
  • 1 onion, thinly sliced
  • 1 carrot, peeled and sliced
  • 1 potato, peeled and cubed
  • 1/2 cup green peas
  • 2 green chilies, slit
  • 1/2 inch ginger, grated
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 4-5 cloves
  • 1 cinnamon stick
  • 2-3 green cardamoms
  • 1 black cardamom
  • 1 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala powder
  • Salt to taste
  • 2 tbsp ghee
  • 4 cups water

Instructions

  • Rinse the rice in running water until the water runs clear. Soak the rice in water for 30 minutes.
  • Heat ghee in a deep bottomed pan. Add cumin seeds, bay leaf, cloves, cinnamon stick, green cardamom, and black cardamom.
  • Once the spices start to splutter, add sliced onions, green chilies, and grated ginger. Fry until the onions turn golden brown.
  • Add cubed potatoes, sliced carrots, and green peas to the pan. Fry for a minute.
  • Add turmeric powder, red chili powder, and salt to the pan. Mix well.
  • Drain the soaked rice and add it to the pan. Fry the rice for 2-3 minutes until it becomes slightly translucent.
  • Add 4 cups of water to the pan. Bring it to a boil.
  • Once the water starts boiling, lower the heat and cover the pan with a tight-fitting lid.
  • Cook the rice on low heat for 15-20 minutes or until all the water is absorbed and the rice is cooked through.
  •  Once the rice is cooked, turn off the heat and let it sit covered for 5-10 minutes.
  • Open the lid and gently fluff the rice with a fork.
  • Sprinkle garam masala powder on top of the rice.
  • Serve hot with your favorite raita or curry.
