Ingredients

For the butter chicken:

  • 500g boneless chicken pieces
  • 1 cup yogurt
  • 2 tbsp ginger garlic paste
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 tsp red chili powder
  • 2 tbsp butter
  • 1 tbsp oil
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 2 tbsp cream
  • Salt to taste

For the kulcha:

  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup yogurt
  • 1/4 cup milk
  • 2 tbsp oil
  • 2 tbsp butter

Instructions:

For the butter chicken:

  • Marinate the chicken with yogurt, ginger garlic paste, cumin powder, coriander powder, garam masala, red chili powder, and salt. Mix well and keep it aside for at least 30 minutes.
  • Heat butter and oil in a pan. Add onions and sauté until golden brown.
  • Add the marinated chicken and cook until it turns golden brown on all sides.
  • Add tomato puree and cook until the oil separates.
  • Add cream and cook for another 2-3 minutes.
  • Garnish with coriander leaves and keep it aside

For the kulcha:

  • In a mixing bowl, add all-purpose flour, baking powder, baking soda, and salt. Mix well.
  • Add yogurt, milk, and oil. Knead the dough until it becomes soft and smooth.
  • Cover the dough with a damp cloth and let it rest for at least 30 minutes.
  • Divide the dough into small equal-sized balls.
  • Roll each ball into a flat round shape. Apply butter on one side.
  • Heat a tawa or a griddle. Place the kulcha on the tawa with the buttered side down.
  • Apply butter on the other side of the kulcha.
  • Cook until both sides turn golden brown.
  • Repeat the same process with the remaining dough balls.

To assemble:

  • Take a kulcha and cut it into half.
  • Spread some butter chicken on one side of the kulcha.
  • Cover it with the other half of the kulcha.
  • Heat the assembled kulcha on a tawa or a griddle until it becomes warm and crispy.
  • Serve hot with some mint chutney or raita.
