  • Raisins – 1/4 cup
  • Ghee – 2 tbsp


  • Wash the rice in cold water and soak it for 30 minutes. Drain the water and keep the rice aside.
  • In a heavy bottomed pan, heat 2 tbsp of ghee on medium heat.
  • Add the soaked rice to the pan and stir well.
  • Cook the rice for 5-6 minutes or until it turns light brown.
  • Add 1 liter of milk to the pan and stir well.
  • Let the milk come to a boil.
  • Add a pinch of saffron to the milk and stir well. This will give the kheer a beautiful yellow color.
  • Add 1 cup of sugar to the pan and stir well. You can adjust the quantity of sugar as per your taste.
  • Add 1 tsp of cardamom powder to the pan and stir well. This will give the kheer a beautiful aroma.
  • Let the kheer simmer on low heat for 20-25 minutes or until the rice is cooked and the milk thickens.
  • Keep stirring the kheer occasionally to prevent it from sticking to the bottom of the pan.
  • Once the kheer is cooked, add 1/4 cup of chopped nuts and 1/4 cup of raisins to the pan and stir well.
  • Turn off the heat and let the kheer cool down for a few minutes.
  • Transfer the kheer to a serving bowl and garnish it with some more chopped nuts and raisins.
  • Serve the chawal ki kheer hot or cold, as per your preference.
