  • 8 to 10 dried red chilies
  • 2 tablespoons coriander seeds
  • 1 tablespoon cumin seeds

  • 1 teaspoon poppy seeds
  • 1 teaspoon fenugreek seeds
  • 6 to 8 cloves
  • 4 to 6 green cardamom pods
  • 2-inch cinnamon stick
  • 4 to 6 dried bay leaves
  • 1 tablespoon black sesame seeds
  • 1 tablespoon grated coconut (optional)
  • 1 tablespoon turmeric powder
  • 1 tablespoon Kashmiri red chili powder
  • 1 teaspoon asafoetida powder
  • Salt to taste


  • Heat a dry skillet or pan over medium heat and add dried red chilies, coriander seeds, cumin seeds, fennel seeds, black peppercorns, poppy seeds, fenugreek seeds, cloves, green cardamom pods, cinnamon stick, dried bay leaves, and black sesame seeds.
  • Dry roast the spices for a few minutes until they become fragrant and slightly browned. Stir continuously to avoid burning.
  • Remove the roasted spices from the heat and allow them to cool down completely.
