  • Wash the chana dal and soak it in water for about 30 minutes.
  • Wash the boneless chicken thighs and pat them dry with a paper towel. Cut them into small pieces and set aside.
  • In a pressure cooker, add the soaked chana dal along with 1/2 cup water. Pressure cook for 2-3 whistles or until the dal is cooked and soft.
  • Once the chana dal is cooked, remove it from the pressure cooker and drain any excess water. Let it cool down.
  • In a mixing bowl, add the cooked chana dal, chicken pieces, ginger-garlic paste, cumin powder, coriander powder, garam masala powder, red chili powder, turmeric powder, and salt. Mix well to combine.
  • Transfer the mixture to a food processor and grind it into a smooth paste. If you don’t have a food processor, you can use a blender or a mixer grinder.
  • Transfer the ground mixture back to the mixing bowl. Add the chopped green chilies and chopped coriander leaves. Mix well.
  • Take a small portion of the mixture and shape it into a round patty. Repeat the process until all the mixture is used up.
  • Heat oil in a frying pan over medium heat. Once the oil is hot, gently place the patties into the oil. Fry them until they are golden brown and crispy on both sides.
  • Once the kebabs are cooked, remove them from the pan and place them on a paper towel to absorb any excess oil.
  • Serve hot with your favorite chutney or sauce.
