Ingredients

  •  4-5 parottas (shredded)
  •  1 onion (chopped)
  •  1 capsicum (chopped)
  •  1 tomato (chopped)
  •  3-4 garlic cloves (finely chopped)
  •  1-inch ginger (finely chopped)
  •  2-3 green chillies (finely chopped)
  •  1 tsp cumin seeds
  •  1 tsp coriander powder
  •  1 tsp red chilli powder
  •  1 tsp garam masala
  •  1 tsp turmeric powder
  •  Salt to taste
  •  Oil

Instructions:

  • First, shred the parottas into small pieces and keep them aside.
  • Heat oil in a pan and add cumin seeds. When they start to splutter, add the chopped garlic, ginger and green chillies. Saute for a few seconds.
  • Add chopped onions and saute until they turn translucent.
  • Now, add chopped capsicum ap of salt 
  • nd tomatoes and mix well. Cook until the vegetables are soft.
  • Add all the spices – coriander powder, red chilli powder, garam masala, turmeric powder and salt to taste. Mix well.
  • Add the shredded parottas to the pan and mix everything together. Cook for a few minutes until the parottas are heated through and coated with the spices.
  • Garnish with fresh coriander leaves and serve hot.

Tips

  •  You can use leftover parottas for this recipe.
  •  Adjust the spice levels according to your taste.
  •  You can also add other vegetables like carrots, peas, corn etc. to this dish.
  •  Serve with raita or any other side dish of your choice.
