For the halwa:

  • Add the grated beetroots and cook for 10-12 minutes, stirring occasionally, until they are soft and tender.
  • Add the sugar and milk to the pan and stir well. Cook for another 10-12 minutes until the mixture thickens and starts to leave the sides of the pan.
  • Add the cardamom powder and chopped nuts to the halwa and stir well.
  • Remove the pan from the heat and let the halwa cool for a few minutes.
  • For the ice cream:
  • In a saucepan, combine the heavy cream, whole milk, and granulated sugar.
  • Heat the mixture over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is warm.
  • Remove the saucepan from the heat and stir in the vanilla extract.
  • Let the mixture cool completely, then transfer it to an ice cream maker and churn according to the manufacturer’s instructions.
  • Transfer the ice cream to a container and freeze for at least 4 hours.

To serve:

  • Reheat the halwa in a microwave or on the stove until warm.
  • Scoop the vanilla ice cream into bowls and top with a generous amount of warm halwa.
  • Garnish with chopped nuts and serve immediately.


  • You can make the halwa ahead of time and store it in the fridge for up to 3 days.
  • If you don’t have an ice cream maker, you can still make the ice cream by pouring the mixture into a shallow container and freezing it for 30 minutes. Then, stir the mixture well and return it to the freezer. Repeat this process every 30 minutes until the ice cream is frozen.
  • You can add more or less sugar to the halwa and ice cream depending on your preference.
