  • 1 cup of cooked rice
  • 1 cup of plain yogurt (curd)
  • 1/4 cup of milk (optional)
  • 1/4 cup of grated carrot
  • 1/4 cup of finely chopped cucumber
  • 2 tablespoons of finely chopped coriander leaves
  • 2 tablespoons of finely chopped mint leaves
  • 1 tablespoon of finely chopped ginger
  • 1 tablespoon of finely chopped green chilies (adjust to taste)
  • 1 tablespoon of oil or ghee
  • 1/2 teaspoon of mustard seeds
  • 1/2 teaspoon of cumin seeds
  • A pinch of asafoetida (hing)
  • Few curry leaves
  • Salt to taste


  • Cook the Rice:
  • Rinse 1 cup of rice thoroughly under running water.
  • In a large pot, add 2 cups of water and bring it to a boil.
  • Add the rinsed rice to the boiling water and cook until the rice is fully cooked and grains are soft.
  • Once cooked, drain any excess water and set the rice aside to cool.
  • Preparing the Tempering:
  • Heat oil or ghee in a small pan over medium heat.
  • Add mustard seeds and let them splutter.
  • Add cumin seeds, asafoetida, and curry leaves.
  • Sauté for a few seconds until the spices release their aroma.
  • Turn off the heat and allow the tempering to cool slightly.

Mixing the Yogurt:

  • In a large mixing bowl, whisk the plain yogurt until smooth.
  • If the yogurt is too thick, you can add 1/4 cup of milk to achieve a creamy consistency (optional).
  • Add the cooked and cooled rice to the yogurt and mix well to combine.

Adding Vegetables and Herbs:

  • Add grated carrot, finely chopped cucumber, coriander leaves, mint leaves, ginger, and green chilies to the yogurt-rice mixture.
  • Mix everything thoroughly until the vegetables and herbs are evenly distributed.
  • Season with salt according to your taste preferences.

Tempering the Curd Rice:

  • Pour the tempered spices (from step 2) over the curd rice mixture.
  • Mix well, ensuring that the tempered spices are evenly incorporated.

Resting and Serving:

  • Allow the curd rice to rest for at least 30 minutes to allow the flavors to meld together.
  • Before serving, you can garnish the curd rice with a sprinkle of coriander leaves and a few more chopped vegetables.
