Ingredients

For the Okra:

  • 500 grams fresh okra (bhindi)
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste

For the Yogurt Gravy:

  • 2 cups yogurt (curd)
  • 2 tablespoons gram flour (besan)
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon fenugreek seeds (methi)
  • 1 tablespoon oil
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  • Wash the okra thoroughly and pat them dry using a kitchen towel. Trim the ends and cut the okra into 1-inch pieces. Set aside.
  • Heat 2 tablespoons of oil in a large pan or skillet over medium heat. Add cumin seeds and let them splutter.
  • Add the chopped okra to the pan and sauté for about 5-7 minutes, or until they are partially cooked. Stir occasionally to ensure even cooking.
  • Sprinkle turmeric powder, red chili powder, and salt over the okra. Mix well to coat the spices evenly. Continue cooking for another 2-3 minutes until the okra is tender. Remove from heat and keep aside.
  • In a bowl, whisk the yogurt until smooth. Add gram flour to the yogurt and whisk again until well combined. Set aside.
  • Heat 1 tablespoon of oil in a separate pan over medium heat. Add cumin seeds, mustard seeds, and fenugreek seeds. Let them crackle.
  • Add the finely chopped onions to the pan and sauté until they turn golden brown.
  • Add ginger paste and garlic paste to the pan and sauté for a minute until the raw smell disappears.
  • Stir in the chopped tomatoes and green chilies. Cook until the tomatoes become soft and mushy.
  • Reduce the heat to low and add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well and cook for a minute to release the flavors.
  • Slowly pour the yogurt mixture into the pan while stirring continuously. Ensure that the heat is on low to prevent the yogurt from curdling. Stir well to combine the spices and yogurt.
  • Add the sautéed okra to the yogurt gravy. Mix gently to coat the okra with the gravy.
  • Cover the pan and simmer for 10-15 minutes on low heat. This will help the flavors to blend and the okra to absorb the yogurt gravy.
  • After the desired consistency is achieved, remove from heat and garnish with fresh coriander leaves.
  • Serve the Dahi aur Bhindi hot with steamed rice or roti (Indian bread) for a wholesome and delicious meal.

Tips

  • Choose fresh and tender okra for this recipe. Avoid using overripe or overly large okra as they may be tough and fibrous.
  • Make sure to dry the okra thoroughly before cutting them. This helps in preventing the sliminess often associated with okra.
  • Adjust the spiciness according to your preference. You can increase or decrease the amount of red chili powder and green chilies to suit your taste.
  • Be careful while adding the yogurt to the gravy. Make sure the heat is on low and stir continuously to prevent curdling.
  • Allow the dish to simmer for a sufficient amount of time for the flavors to meld together and the okra to absorb the yogurt gravy.
  • Dahi aur Bhindi is a delightful combination of textures and flavors, with the tanginess of yogurt complementing the earthiness of okra. It makes for a perfect lunch or dinner option, especially during summers when okra is in season.
  • So go ahead and try this delicious Dahi aur Bhindi recipe at home. Impress your family and friends with this unique and tasty dish that will surely become a favorite in no time. Enjoy your meal!
