  • 500 grams boneless chicken, cut into bite-sized pieces
  • 1 cup plain yogurt (dahi)
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1 teaspoon turmeric powder
  • Salt to taste

For the Gravy:

  • 2 tablespoons oil or ghee (clarified butter)
  • 1 tablespoon cumin seeds
  • 1 large onion, finely chopped
  • 2 green chilies, slit lengthwise
  • 10-12 garlic cloves, minced
  • 1 teaspoon garam masala powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  • In a large mixing bowl, combine the chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Mix well to ensure that all the chicken pieces are coated with the marinade. Let it marinate for at least 30 minutes to an hour. This will help the flavors to penetrate the chicken and make it tender.
  • Heat oil or ghee in a deep pan or skillet over medium heat. Add cumin seeds and let them crackle for a few seconds. Then, add chopped onions and green chilies. Sauté until the onions turn golden brown.
  • Add minced garlic to the pan and cook for a minute until it releases its aroma and turns slightly golden. Be careful not to burn the garlic as it can become bitter.
  • Now, add the marinated chicken along with the marinade to the pan. Stir well and cook for about 8-10 minutes until the chicken is partially cooked and the yogurt has reduced slightly.
  • Reduce the heat to low and add garam masala powder, coriander powder, cumin powder, red chili powder, and salt. Mix everything together to coat the chicken evenly with the spices. Cook for another 5 minutes to allow the flavors to blend well.
  • Cover the pan with a lid and simmer for 15-20 minutes or until the chicken is cooked through and tender. Stir occasionally to prevent sticking or burning.
  • Once the chicken is cooked, check the consistency of the gravy. If you prefer a thicker gravy, cook for a few more minutes uncovered. If the gravy is too thick, you can add a little water to adjust the consistency.
