For Egg Masala:

  •  4 hard-boiled eggs
  •  2 tbsp oil
  •  1 large onion, finely chopped
  •  1 tsp ginger-garlic paste
  •  2 large tomatoes, finely chopped
  •  1 tsp red chili powder
  •  1 tsp coriander powder
  •  1/2 tsp turmeric powder
  •  1/2 tsp garam masala powder
  •  1/2 tsp cumin seeds
  •  1/2 tsp salt
  •  2 tbsp butter
  •  1/4 cup cream
  •  1/4 cup chopped coriander leaves

For Rice:

  •  2 cups basmati rice
  •  4 cups water
  •  1 tsp salt
  •  2 tbsp oil


  • Hard-boil the eggs and peel the shells off. Prick the eggs with a fork and keep aside.
  • Wash the basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes.
  • In a large pot, add 4 cups of water and bring it to a boil. Add salt, oil, and soaked rice to the pot. Cook the rice until it is cooked through and the water has been absorbed.
  • Heat the oil in a pan on medium heat. Add cumin seeds and let them splutter. Then add finely chopped onions and fry until they turn golden brown.
  • Add ginger-garlic paste to the pan and fry until the raw smell goes away.
  • Add chopped tomatoes to the pan and mix well. Cook until the tomatoes turn soft and mushy.
  • Add red chili powder, coriander powder, turmeric powder, garam masala powder, and salt to the pan. Mix well and cook for 2-3 minutes.
  • Add butter to the pan and mix well. Let it melt and cook for another 2-3 minutes.
  • Add the boiled eggs to the pan and coat them with the gravy. Let the eggs cook in the gravy for 5-7 minutes.
  • Add cream to the pan and mix well. Cook for 2-3 minutes.
  • Turn off the heat and garnish with chopped coriander leaves.
  • Serve hot with rice.
