Ingredients:

  • 1 cup of fine yellow cornmeal
  • 4 cups of water
  • 1 cup of sugar
  • 1 cup of milk (or non-dairy milk alternative)
  • 1/2 cup of ghee (clarified butter)
  • 1/2 cup of raisins
  • 1/2 cup of chopped nuts (almonds, pistachios, or cashews)
  • 1/2 teaspoon of ground cardamom
  • Pinch of salt
  • Now, let’s get started with the recipe:
  • In a large, heavy-bottomed pot, bring 4 cups of water to a boil.
  • Add a pinch of salt and slowly whisk in 1 cup of fine yellow cornmeal. Reduce the heat to low and continue to stir until the mixture thickens and the cornmeal is cooked, about 15-20 minutes.
  • In a separate pan, heat 1/2 cup of ghee (clarified butter) over medium heat. Add 1/2 cup of raisins and 1/2 cup of chopped nuts and sauté until the raisins plump up and the nuts are lightly toasted.
  • Once the cornmeal mixture is cooked, add 1 cup of sugar and 1 cup of milk (or non-dairy milk alternative) and stir until well combined.
  • Continue to cook the mixture over low heat, stirring constantly, until it thickens and starts to pull away from the sides of the pot, about 10-15 minutes.
  • Add the sautéed raisins and nuts, along with 1/2 teaspoon of ground cardamom, and stir until well combined.
  • Remove the pot from the heat and let the polenta halwa cool for a few minutes.
  • Transfer the polenta halwa to a serving dish and garnish with additional chopped nuts and raisins, if desired.
