  • 2 cups of idli batter
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 1 tbsp finely chopped ginger
  • 1 tbsp finely chopped green chillies
  • 1 tbsp finely chopped coriander leaves
  • Salt to taste


  • Take a large mixing bowl and add the idli batter to it. Mix well to ensure there are no lumps in the batter.
  • Heat the oil in a pan on medium flame. Once the oil is hot, add the mustard seeds and let them splutter.
  • Add the urad dal and chana dal to the pan and sauté for a minute or two.
  • Add the finely chopped ginger and green chillies to the pan and sauté for a few more minutes
  • Once the ginger and chillies are cooked, add the mixture to the idli batter.
  • Add salt to the batter as per your taste and mix well.
  • Take a goli idli mould and grease it with oil. Fill each cavity with the batter, leaving some space at the top for the idlis to rise.
  • Place the mould in a steamer and steam for 10-12 minutes or until the idlis are cooked.
  • Once the idlis are cooked, remove the mould from the steamer and let it cool for a minute or two.
  • Use a spoon to remove the idlis from the mould and place them on a plate.
  • Garnish with finely chopped coriander leaves and serve hot with coconut chutney or sambar.


  •  You can add grated carrots, peas or chopped onions to the batter to make the idlis more nutritious.
  •  Make sure to grease the mould properly before adding the batter to avoid the idlis sticking to the mould.
  •  You can also add a pinch of baking soda to the batter to make the idlis fluffy and soft.
  •  Do not overcook the idlis as they may become dry and hard.
