  • 2 cups spinach, blanched and finely chopped
  • 1 cup green peas, boiled and mashed
  • 2 medium-sized potatoes, boiled and mashed
  • 1 medium-sized onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon chaat masala
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (optional)
  • 2 tablespoons besan (gram flour)
  • 2 tablespoons rice flour
  • Salt to taste
  • Oil for shallow frying
  • Fresh coriander leaves, chopped (for garnish)
  • Lemon wedges (for serving)


  • Start by blanching the spinach. Bring a pot of water to boil and add the spinach leaves. Let them blanch for 2-3 minutes, then drain and rinse with cold water to stop the cooking process. Squeeze out any excess water from the spinach and finely chop it.
  • In a mixing bowl, combine the chopped spinach, mashed green peas, and mashed potatoes. Mix them well until they are evenly combined.
  • Heat a little oil in a pan and add the chopped onions and green chilies. Sauté until the onions turn translucent.
  • Add ginger-garlic paste to the pan and cook for another minute, stirring continuously.
  • Now, add the cumin powder, chaat masala, garam masala, turmeric powder, red chili powder (if using), and salt. Mix well and cook for a minute to roast the spices.
  • Transfer the spice mixture to the mixing bowl with spinach, peas, and potatoes. Mix everything thoroughly to combine all the flavors.
  • Add besan (gram flour) and rice flour to the mixture. These flours help in binding the kebabs. Mix well until the mixture becomes thick and holds together.
  • Divide the mixture into equal-sized portions and shape them into round or oval-shaped kebabs.
  • Heat oil in a shallow pan or griddle for frying the kebabs. You can also use a non-stick pan with a little oil for a healthier option.
  • Place the kebabs on the pan and cook them on medium heat until they turn golden brown and crispy on both sides. Flip them gently to ensure even cooking.
  • Once the kebabs are cooked, remove them from the pan and place them on a paper towel to absorb any excess oil.
  • Garnish the Hara Bhara Kebabs with freshly chopped coriander leaves.
