Hara Dana Methi Bail Gatta Curry is a delicious and healthy dish from the Indian state of Rajasthan. It is made with fresh fenugreek leaves, chickpea flour dumplings, and green gram seeds. The dish is usually served with hot roti or steamed rice. Here’s how you can make this flavorful curry at home.

Here is a breakfast recipe that is easy to prepare and delicious to eat.

Ingredients

For the gatta:

  • 1 cup chickpea flour (besan)
  • 1/2 teaspoon carom seeds (ajwain)
  • 1/2 teaspoon cumin seeds (jeera)
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon salt
  • 2 tablespoons oil
  • 1/4 cup water

 

For the curry:

  • 1 cup fresh fenugreek leaves (methi), chopped
  • 1 cup green gram seeds (hari moong dal), soaked in water for 2 hours
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds (jeera)
  • 1 teaspoon mustard seeds (rai)
  • 1/4 teaspoon asafoetida (hing)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala powder
  • Salt to taste
  • 2 cups water
  • 1 tablespoon lemon juice

Instructions:

  • To make the gatta, mix together the chickpea flour, carom seeds, cumin seeds, red chili powder, turmeric powder, salt, and oil in a bowl.
  • Gradually add water to the mixture and knead it into a smooth dough. Divide the dough into small equal-sized balls.
  • Roll each ball into a cylindrical shape, around 1/2 inch thick. You can use a rolling pin or simply roll them between your palms.
  • Boil water in a large pot and add the cylindrical gatta to it. Let them cook for 10-12 minutes, or until they float to the surface. Remove them from the water and set aside.
  • Heat oil in a large pan over medium heat. Add cumin seeds, mustard seeds, and asafoetida. Once they start to splutter, add the chopped fenugreek leaves and soaked green gram seeds. Mix well and cook for 5-6 minutes.
  • Add turmeric powder, coriander powder, cumin powder, red chili powder, and garam masala powder to the pan. Mix well and cook for another minute.
  • Add 2 cups of water to the pan and bring the mixture to a boil. Add the cooked gatta to the pan and stir gently.
  • Cover the pan and let the curry cook for 10-12 minutes on low heat. Add salt to taste and stir.
  • Finally, add lemon juice to the curry and mix well. Turn off the heat and let the curry rest for a few minutes before serving.
