  • 2 green chilies, slit
  • 2 bay leaves
  • 2 cloves
  • 2 cardamom pods
  • 1 cinnamon stick
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/4 cup peanuts, roasted
  • 1/4 cup cashews, roasted
  • 2 tablespoons ghee
  • Salt to taste
  • For Garnish:
  • Fried onions
  • Chopped coriander leaves
  • Lemon wedges


  • Wash and soak basmati rice in water for 30 minutes.
  • In a pot, bring 4 cups of water to a boil. Add salt and oil to the water.
  • Drain the soaked rice and add it to the boiling water. Stir it once and cover the pot with a lid. Cook the rice on low flame for 15-20 minutes or until the rice is cooked.
  • Once the rice is cooked, remove the pot from heat and let it cool for a few minutes.
  • In a separate pan, heat ghee over medium heat.
  • Add bay leaves, cloves, cardamom pods, and cinnamon stick to the pan. Fry the spices for a minute.
  • Add sliced onions to the pan and fry them until they turn golden brown.
  • Add ginger paste, garlic paste, and green chilies to the pan. Fry for a minute.
  • Add cumin seeds, coriander powder, turmeric powder, and red chili powder to the pan. Fry the spices for a minute.
  • Add roasted peanuts and cashews to the pan. Fry for a minute.
  • Add salt to the pan and mix all the ingredients well.
  • Add cooked rice to the pan and mix it with the bagara masala.
  • Cover the pan with a lid and let it cook on low heat for 5 minutes.
  • Turn off the heat and let the rice rest for 10 minutes.
  • Garnish the Hyderabadi Bagara Khana with fried onions, chopped coriander leaves, and lemon wedges.
  • Serve hot and enjoy the flavorful rice dish.
