  •  cup urad dal
  • 1/2 cup besan

  • 1 tbsp sugar
  • 1 tbsp lemon juice
  • 1 tbsp oil
  • 1 tbsp mustard seeds
  • 1 tbsp sesame seeds
  • 2-3 tbsp chopped coriander leaves

Method:

  • Soak the rice and urad dal in separate bowls for at least 4 hours.
  • Drain the water and grind the rice and urad dal separately to a fine paste.
  • Mix both the batters together in a bowl and add the besan, semolina, ginger-green chilli paste, salt, sugar and lemon juice.
  • Mix well to form a smooth batter. Add water if required to get the right consistency.
  • Grease a thali or a shallow tray with oil and keep it ready.
  • Add the eno fruit salt to the batter and mix gently.
  • Pour the batter into the greased tray and steam for 10-15 minutes or until the dhokla is cooked.
  • Check if the dhokla is cooked by inserting a toothpick in the center. If it comes out clean, the dhokla is ready.
  • Let the dhokla cool down and cut it into small pieces.
  • Heat oil in a pan and add mustard seeds and sesame seeds. Let them splutter.
  • Pour the tempering over the dhokla pieces and garnish with chopped coriander leaves.
  • Serve hot with coconut chutney and sambar.

Tips

  • Make sure to soak the rice and urad dal for at least 4 hours to get a smooth batter.
  • Do not add too much water while grinding the rice and urad dal. The batter should be thick and smooth.
