How To make Jhajariya? | Instant Jhajariya Recipe

Jhajariya is a popular dessert in the Indian state of Rajasthan. It is a sweet pudding made with broken wheat, jaggery, and milk. This dessert is usually served during special occasions like weddings, festivals, and family gatherings. The dish has a unique taste and texture, which makes it stand out from other Indian desserts.

Here is a breakfast recipe that is easy to prepare and delicious to eat.

Ingredients

  • cup broken wheat (dalia)
  • 1 cup jaggery
  • 1 liter milk
  • 4-5 cardamom pods
  • 10-12 almonds
  • 10-12 cashew nuts
  • 2 tablespoons ghee
  • Water as required

Instructions:

  • Clean and wash the broken wheat thoroughly in running water. Drain the excess water and keep it aside.
  • Take a deep bottomed pan and add ghee to it. Once the ghee is hot, add the broken wheat to it and roast it until it turns golden brown. This may take around 10-12 minutes on medium flame.
  • Once the broken wheat turns golden brown, add 3 cups of water to the pan and mix it well. Bring it to a boil and then let it simmer for 15-20 minutes or until the water is absorbed by the wheat. Stir occasionally to avoid sticking.
  • Meanwhile, take another pan and add jaggery and milk to it. Keep it on medium flame and stir continuously until the jaggery dissolves completely. Once the jaggery dissolves, add crushed cardamom pods to the pan.
  • Once the water is absorbed by the wheat, add the jaggery and milk mixture to the pan. Mix well and let it simmer on low flame for another 15-20 minutes. Stir occasionally to avoid sticking.
  • While the jhajariya is cooking, take a separate pan and roast the almonds and cashew nuts in ghee until they turn golden brown. Once done, take them out of the pan and chop them into small pieces.
  • Once the jhajariya is cooked, turn off the flame and add the roasted almonds and cashew nuts to it. Mix well.
  • Serve the jhajariya hot or cold. It can be garnished with chopped nuts or saffron strands.

Tips

  • If you don’t have broken wheat, you can use regular wheat or semolina (suji) instead.
  • Adjust the amount of jaggery according to your taste. You can also use sugar instead of jaggery.
  •  If the jhajariya is too thick, you can add more milk to it.
  • Make sure to stir the jhajariya occasionally to avoid sticking to the bottom of the pan.
