For the Dough:

  • 2 cups of all-purpose flour (maida)
  • 1/4 cup of semolina (sooji)
  • 1/2 cup of ghee (clarified butter)
  • 1/2 cup of water
  • For the Filling:
  • 2 cups of khoya (mawa)
  • 1/2 cup of desiccated coconut
  • 1/2 cup of chopped mixed nuts (almonds, pistachios, cashews)
  • 1/2 cup of powdered sugar
  • 1/2 teaspoon of cardamom powder
  • A pinch of saffron strands

For Frying:

  • Oil for deep frying

For Garnishing:

  • Powdered sugar
  • Chopped mixed nuts


  • Start by making the dough. In a mixing bowl, add the all-purpose flour, semolina, and ghee. Mix everything well until it resembles breadcrumbs.
  • Slowly add water and knead the dough until it comes together. The dough should be firm and smooth. Cover the dough with a damp cloth and let it rest for 30 minutes.
  • In the meantime, prepare the filling. In a pan, heat the khoya on low heat until it starts to melt. Add the desiccated coconut and mix well.
  • Add the chopped mixed nuts, powdered sugar, cardamom powder, and saffron strands. Mix everything well and cook for another 2-3 minutes until the mixture comes together.
  • Turn off the heat and let the mixture cool down.
  • After 30 minutes, take the dough and knead it again for a few minutes.
  • Roll out the dough into thin circles of approximately 3-4 inches in diameter.
  • Place a tablespoon of the filling mixture in the center of the circle.
  • Apply some water on the edges of the circle using your finger. This will help in sealing the gujiya.
  • Fold the circle into half and press the edges together to seal it.
  • Use a fork to make a design around the edges of the gujiya.
  • Repeat the same process with the remaining dough and filling mixture.
  • Heat oil in a deep frying pan on medium heat.
  • Once the oil is hot, add the gujiya in small batches and fry them until they turn golden brown. Make sure to flip the gujiya occasionally to ensure that they are evenly fried.
  • Once the gujiya are fried, remove them from the oil using a slotted spoon and place them on a paper towel to remove any excess oil.
  • Once the gujiya are cool, dust them with powdered sugar and sprinkle some chopped mixed nuts on top.
