  • 500g potatoes, boiled and peeled
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 onion, finely chopped
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • Salt, to taste
  • 1 tbsp tamarind paste
  • 2 tbsp jaggery
  • 1 tsp garam masala
  • 1 tbsp chopped coriander leaves
  • 8-10 garlic cloves, minced


  • First, boil the potatoes until they are cooked through but not mushy. Once boiled, peel the potatoes and cut them into bite-sized pieces.
  • Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds and let them crackle.
  • Add finely chopped onions and sauté until they are soft and translucent.
  • Add ginger-garlic paste and minced garlic cloves and sauté for a minute.
  • Add red chili powder, turmeric powder, coriander powder, cumin powder, and salt to taste. Sauté for a minute.
  • Add tamarind paste and jaggery and mix well. Cook until the jaggery is melted and the mixture is thick and sticky.
  • Add the boiled potatoes and mix well, making sure the potatoes are coated in the masala.
  • Add garam masala and mix well.
  • Cook for another 5-7 minutes, stirring occasionally, until the potatoes are well coated in the masala and are slightly crispy on the outside.
  •  Garnish with chopped coriander leaves and serve hot with rice or roti.
