  • 1 tablespoon oil
  • 1/2 teaspoon salt
  • Water (as required)

For the filling:

  • 1 cup poppy seeds (khus khus), soaked in water for 2 hours
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil

Prepare the dough:

  • In a mixing bowl, combine the all-purpose flour, salt, and oil.
  • Gradually add water and knead until a soft and pliable dough forms.
  • Cover the dough with a damp cloth and let it rest for 15-20 minutes.

Prepare the filling:

  • Drain the soaked poppy seeds and grind them to a coarse paste.
  • Heat oil in a pan and add the chopped onions. Sauté until they turn golden brown.
  • Add the ginger-garlic paste and green chilies. Cook for another minute.
  • Now, add the turmeric powder, red chili powder, garam masala, and salt. Mix well.
  • Add the ground poppy seed paste and cook for 3-4 minutes, stirring continuously.
  • Remove from heat and let the filling cool down.

Assemble the rolls:

  • Divide the dough into small lemon-sized balls.
  • Roll each ball into a thin circular disc using a rolling pin.
  • Place a spoonful of the prepared filling in the center of the disc.
  • Fold the sides of the disc towards the center, covering the filling, and form a roll.
  • Secure the edges by pressing gently.

Cook the rolls:

  • Heat a griddle or a non-stick pan over medium heat.
  • Place the rolls on the hot griddle and cook until both sides turn golden brown, applying oil as required.
  • Remove the rolls from the griddle and drain excess oil on a kitchen towel.

Serve and enjoy:

  • Khus Khus rolls are best enjoyed when served hot.
  • Serve them as is or with your favorite chutney or sauce.

  • You can add finely chopped vegetables like carrots, peas, or bell peppers to the filling to make it more nutritious and flavorful.
  • For a healthier alternative, you can bake the rolls instead of frying them. Preheat the oven to 180°C (350°F) and bake the rolls until they turn golden brown.
  • Experiment with different spices and herbs to personalize the flavor profile of the filling.
  • Make sure to seal the edges of the rolls properly to prevent the filling from oozing out during cooking.
