Ingredients

  • 1 kg mutton
  • 2-3 tablespoons ghee or oil
  • 2-3 bay leaves

  • 3-4 cardamom pods
  • 2-3 cloves
  • 2 large onions, chopped
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 3-4 tomatoes, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 10-12 dried red chilies
  • 1 teaspoon turmeric powder
  • 2-3 teaspoons red chili powder
  • 1 teaspoon garam masala powder
  • Salt, to taste
  •  Water, as needed
  • Fresh coriander leaves, for garnishing

Method:

  • Heat ghee or oil in a pressure cooker or a large pot. Add bay leaves, cinnamon stick, cardamom pods, and cloves. Fry for a few seconds until fragrant.
  • Add chopped onions and fry until golden brown. Add ginger and garlic paste and fry for a minute or two.
  • Add chopped tomatoes and fry until the oil separates from the mixture.
  • Meanwhile, in a separate pan, dry roast cumin seeds, coriander seeds, and dried red chilies until fragrant. Grind the mixture into a fine powder.
  • Add the ground spice mixture, turmeric powder, red chili powder, garam masala powder, and salt to the tomato-onion mixture. Fry for a minute or two.
  • Add the mutton pieces to the mixture and fry for a few minutes until the meat is browned.
  • Add enough water to cover the meat and bring the mixture to a boil.
  • Close the lid of the pressure cooker and cook for 15-20 minutes or until the meat is tender. If using a pot, cover with a lid and cook on low heat until the meat is tender, stirring occasionally.
  • Once the meat is tender, garnish with fresh coriander leaves and serve hot with rice or roti.
