  • 2-3 teaspoons red chili powder
  • 1 teaspoon garam masala powder
  • Salt, to taste
  • ¬†Water, as needed
  • Fresh coriander leaves, for garnishing

  • Heat ghee or oil in a pressure cooker or a large pot. Add bay leaves, cinnamon stick, cardamom pods, and cloves. Fry for a few seconds until fragrant.
  • Add chopped onions and fry until golden brown. Add ginger and garlic paste and fry for a minute or two.
  • Add chopped tomatoes and fry until the oil separates from the mixture.
  • Meanwhile, in a separate pan, dry roast cumin seeds, coriander seeds, and dried red chilies until fragrant. Grind the mixture into a fine powder.
  • Add the ground spice mixture, turmeric powder, red chili powder, garam masala powder, and salt to the tomato-onion mixture. Fry for a minute or two.

  • Add enough water to cover the meat and bring the mixture to a boil.
  • Close the lid of the pressure cooker and cook for 15-20 minutes or until the meat is tender. If using a pot, cover with a lid and cook on low heat until the meat is tender, stirring occasionally.
  • Once the meat is tender, garnish with fresh coriander leaves and serve hot with rice or roti.

  • Use fresh and tender mutton for the best results.
  • Adjust the amount of red chili powder and dried red chilies according to your taste preferences.
  • If you don’t have a pressure cooker, you can use a regular pot to cook the meat. Just make sure to cook it on low heat for a longer time.
