  • Grate the lauki and squeeze out the excess water using a muslin cloth or your hands. Keep the grated lauki aside.
  • In a mixing bowl, add the whole wheat flour, grated lauki, grated ginger, green chili, cumin seeds, coriander powder, red chili powder, and salt. Mix well.
  • Slowly add water and knead the dough until it is soft and pliable. The amount of water needed may vary depending on the moisture content of the lauki.
  • Cover the dough and let it rest for 15-20 minutes.

  • Heat a tawa or griddle on medium-high heat.
  • Place the flattened dough on the tawa and cook for 1-2 minutes or until it starts to puff up.
  • Flip the roti and cook for another 1-2 minutes.
  • Drizzle some oil or ghee on top of the roti and cook for another 30 seconds.
  • Remove the roti from the tawa and repeat the process with the remaining dough balls.
  • Serve the lauki roti hot with yogurt, pickle, or any curry of your choice.

  • Make sure to squeeze out the excess water from the grated lauki, otherwise, the roti may become soggy.
