Ingredients

  • 1 cup Makhana (lotus seeds)
  • 4 cups milk

  • A pinch of saffron strands
  • 1 tablespoon chopped nuts (almonds, cashews, and pistachios)
  • 1 tablespoon ghee (clarified butter)

Instructions:

  • Heat a pan and add a tablespoon of ghee to it. Once the ghee has melted, add the makhana and roast it on medium heat until it becomes crispy and golden brown. This will take around 5-7 minutes. Keep stirring the makhana so that it doesn’t burn.
  • Once the makhana is roasted, remove it from the pan and let it cool down. Once it has cooled down, coarsely grind it in a food processor or a mixer grinder.
  • In the same pan, add 4 cups of milk and bring it to a boil. Keep stirring the milk so that it doesn’t stick to the bottom of the pan.
  • Once the milk has come to a boil, lower the heat and let it simmer for 10-15 minutes until it thickens slightly.
  • Add the coarsely ground makhana to the milk and stir well. Let it cook for 5-7 minutes on low heat.
  • Add sugar and stir until it dissolves. Keep stirring the kheer so that it doesn’t stick to the bottom of the pan.
  • Add cardamom powder and saffron strands to the kheer and mix well.
  • Let the kheer cook for another 5-7 minutes on low heat until it thickens and reaches the desired consistency.
  • Turn off the heat and let the kheer cool down.
  • Garnish the kheer with chopped nuts and serve it chilled or at room temperature.
