Malai gujiya is a popular Indian sweet that is usually made during festivals such as Holi and Diwali. This delicious sweet is a pastry filled with a rich and creamy mixture of condensed milk and dry fruits. It is then deep-fried until crispy and golden brown, and finally coated with sugar syrup to give it a shiny and sticky glaze. For the dough:

  • cups all-purpose flour
  • 3 tablespoons ghee
  • 1/4 teaspoon salt
  • Water (as required)

For the filling:

  • 1 cup condensed milk
  • 1/2 cup khoya/mawa (dried milk solids)
  • 1/2 cup chopped mixed nuts (almonds, cashews, pistachios, and raisins)
  • 1/4 teaspoon cardamom powder

For the sugar syrup:

  • 1 cup sugar
  • 1/2 cup water
  • A few drops of rose water

For deep frying:

    • Oil or ghee (as required)


  • Step 1: Prepare the dough

In a mixing bowl, combine the all-purpose flour, ghee, and salt. Mix everything together using your fingertips until the mixture resembles breadcrumbs. Add water gradually and knead to form a firm and smooth dough. Cover the dough with a damp cloth and let it rest for 30 minutes.

  • Step 2: Make the filling

In a non-stick pan, heat the condensed milk on medium heat. Add the khoya/mawa and mix well until it is fully incorporated into the condensed milk. Keep stirring the mixture continuously to prevent it from sticking to the pan and burning. Cook the mixture for about 8-10 minutes until it thickens and leaves the sides of the pan.

Add the chopped nuts and cardamom powder to the mixture and mix well. Remove the pan from the heat and let the mixture cool down completely.

  • Step 3: Shape the gujiya

Take a small portion of the dough and roll it into a thin circle. Cut the circle into half and place a spoonful of the filling on one side. Fold the other half over the filling and press the edges together to seal it tightly. Use a fork to make impressions on the edges for a decorative look. Repeat the process with the remaining dough and filling.

  • Step 4: Fry the gujiya

In a deep pan or kadhai, heat the oil or ghee on medium heat. Once the oil is hot, gently slide the gujiyas into the oil and fry them until they are golden brown on both sides. Remove them using a slotted spoon and place them on a paper towel to remove any excess oil.

  • Step 5: Coat with sugar syrup

In a separate pan, add sugar and water and bring the mixture to a boil. Once the sugar dissolves, reduce the heat and let the syrup simmer for a few minutes until it thickens slightly. Add a few drops of rose water to the syrup and mix well.

Dip the fried gujiyas into the sugar syrup and coat them well. Place them on a plate and let them cool down completely. Serve the malai gujiyas garnished with chopped nuts.
