  • Tomato – 2 medium-sized (finely chopped)

  • Green chillies – 2 (finely chopped)
  • Turmeric powder – 1/2 tsp
  • Red chilli powder – 1/2 tsp
  • Salt – as per taste
  • Coriander leaves – for garnishing


  • Heat a pan and dry roast the semolina on low heat for 5-6 minutes until it turns light brown in color. Keep stirring continuously to avoid burning. Once done, transfer it to a plate and keep it aside.
  • In the same pan, heat 2 tbsp oil and add 1 tsp mustard seeds and 1 tsp cumin seeds. Let them splutter.
  • Add a sprig of curry leaves, 1 finely chopped onion, 1 inch of finely chopped ginger, and 2 finely chopped green chillies. Saute until the onions turn translucent.
  • Now add 2 finely chopped tomatoes, 1/2 tsp turmeric powder, 1/2 tsp red chilli powder, and salt as per taste. Mix well and cook for 5-6 minutes until the tomatoes are soft and mushy.
  • Add 2 cups of water to the pan and bring it to a boil.
  • Once the water starts boiling, slowly add the roasted semolina to the pan, stirring continuously to avoid lumps.
  • Mix well and cook on low heat for 5-7 minutes until the water is absorbed and the upma is cooked.
  • Once the upma is cooked, switch off the flame and let it rest for 2-3 minutes.
  • Garnish with coriander leaves and serve hot with coconut chutney or tomato ketchup.
