  • Rinse the idli rice, urad dal, and fenugreek seeds in water and soak them in water for at least 4-5 hours. 
  • Drain the water and grind the soaked rice, dal, and fenugreek seeds into a smooth batter. Add water as needed to achieve the desired consistency. 
  • Cover the batter and let it ferment for 6-8 hours or overnight. The fermentation process makes the batter light and fluffy. 
  • Once the batter has fermented, add salt to taste and mix well. 
  • Heat a non-stick griddle or a cast-iron skillet on medium heat. Once the pan is hot, grease it with a little oil. 
  • Pour a ladleful of the batter onto the center of the pan and spread it in a circular motion to form a thick pancake. 
  • Sprinkle the chopped onions, tomatoes, green chili, and cilantro on top of the uttapam. 
  • In a small pan, heat a tsp of oil and add cumin and mustard seeds. Once the seeds start to splutter, add turmeric powder and red chili powder. Pour this seasoning over the uttapam. 
  • Cover the pan with a lid and let the uttapam cook for 2-3 minutes on medium heat. 
  • Once the bottom of the uttapam turns golden brown, flip it over and cook the other side for 1-2 minutes. 
  • Remove the uttapam from the pan and serve hot with coconut chutney or tomato chutney.
