Ingredients

For the dough:

  • 2 cups all-purpose flour
  • 1/4 cup vegetable oil
  • Salt to taste
  • Water as needed

For the filling:

  • 2 cups frozen green peas
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala powder
  • Salt to taste
  • 1 tbsp vegetable oil
  • 1/4 cup chopped coriander leaves

Instructions:

Step 1: Prepare the dough

  • In a large mixing bowl, combine the all-purpose flour, vegetable oil, and salt.
  • Mix everything together until the mixture becomes crumbly.
  • Slowly add water, a little at a time, and knead the dough until it becomes smooth and pliable.
  • Cover the dough with a damp cloth and let it rest for at least 20 minutes.

Step 2: Prepare the filling

  • In a pan, heat 1 tbsp vegetable oil over medium heat.
  • Add the cumin seeds and coriander seeds and fry until they start to crackle.
  • Add the frozen green peas and cook for 2-3 minutes.
  • Add the turmeric powder, red chili powder, garam masala powder, and salt.
  • Mix everything together and cook for another 2-3 minutes.
  • Remove the pan from the heat and let the mixture cool down.
  • Once cooled, add chopped coriander leaves and mix everything together.

Step 3: Shape the samosas

  • Divide the dough into small lemon-sized balls.
  • Roll each ball into a thin oval-shaped disc.
  • Cut the disc in half to make two semi-circles.
  • Take one semi-circle and form a cone by bringing the straight edges together and sealing the edges with a little water.
  • Fill the cone with the prepared pea filling, leaving some space at the top.
  • Seal the top of the cone with a little water.
  • Repeat the process with the remaining dough and filling.

Step 4: Fry the samosas

  • Heat enough vegetable oil in a deep frying pan.
  • Once the oil is hot, add a few samosas at a time and fry on medium heat until they turn golden brown.
  • Remove the samosas from the oil and place them on a paper towel to absorb the excess oil.
  • Serve hot with tamarind or mint chutney.

Tips

  • To make the samosas crispy, add a little rice flour to the dough while kneading.
  • Make sure the oil is hot before adding the samosas. If the oil is not hot enough, the samosas will absorb too much oil and become soggy.
