  • Chicken – 500 gms (cut into medium-sized pieces)
  • Onion – 2 large (sliced)
  • Ginger – 1 inch (chopped)
  • Garlic – 5 cloves (chopped)
  • Tomato – 2 medium (chopped)
  • Green chilies – 4 (slit)
  • Curry leaves – a few
  •  Coconut oil – 2 tbsp
  • Mustard seeds – 1 tsp
  •  Fennel seeds – 1 tsp
  • Coriander powder – 2 tbsp
  • Turmeric powder – 1 tsp
  •  Kashmiri chili powder – 2 tbsp
  • Garam masala – 1 tsp
  • Salt – as required
  • Coconut milk – 1 cup
  • Water – 1 cup


  • Heat coconut oil in a deep pan or a kadhai. Add mustard seeds and fennel seeds and let them splutter.
  • Add sliced onions, chopped ginger, garlic, and curry leaves. Saute until the onions turn golden brown.
  • Add chopped tomatoes and green chilies. Cook until the tomatoes are soft and mushy.
  • Add coriander powder, turmeric powder, Kashmiri chili powder, garam masala, and salt. Mix well and cook for 2-3 minutes until the spices are roasted.
  • Add chicken pieces and mix well with the spices. Cook for 5-6 minutes until the chicken is slightly browned.
  • Add one cup of water and bring it to a boil. Cover the pan and simmer on low flame for 15-20 minutes until the chicken is cooked and tender.
  • Once the chicken is cooked, add one cup of thick coconut milk and mix well. Simmer for 2-3 minutes until the gravy thickens and the chicken is coated with the coconut milk.
  • Switch off the flame and let the curry rest for 10-15 minutes. This will help the flavors to blend well.
  • Garnish with fresh curry leaves and serve hot with steamed rice or Indian breads.


  • Use fresh coconut milk for a creamy and rich gravy. You can extract the coconut milk from grated coconut or use store-bought coconut milk.
  • Adjust the spice level according to your preference. If you want the curry to be less spicy, reduce the amount of Kashmiri chili powder
  • You can also add some sliced potatoes or carrots along with the chicken for a wholesome meal.
  • If you do not have access to coconut oil, you can use any vegetable oil.
