  • Lamb shanks – 4
  • Onion – 2 medium-sized, finely chopped
  • Tomato – 2 medium-sized, finely chopped
  • Ginger-garlic paste – 1 tablespoon
  • Green chillies – 3-4, slit lengthwise
  • Curry leaves – a few
  • Red chilli powder – 1 teaspoon
  • Turmeric powder – 1/2 teaspoon
  • Coriander powder – 1 tablespoon
  • Cumin powder – 1 teaspoon
  • Garam masala powder – 1 teaspoon
  • Tamarind pulp – 1 tablespoon
  • Salt – as per taste
  • Oil – 4 tablespoons
  • Water – 2 cups
  • Fresh coriander leaves – a handful, finely chopped
  • Lemon juice – 1 tablespoon


  • First, wash the lamb shanks thoroughly and drain the excess water. Pat them dry with a paper towel and keep them aside.
  • Heat 2 tablespoons of oil in a heavy-bottomed pan and add the lamb shanks to it. Fry them on medium heat for 5-6 minutes until they are browned on all sides. Remove them from the pan and keep them aside.
  • In the same pan, add the remaining 2 tablespoons of oil and sauté the chopped onions until they turn golden brown. Add the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
  • Now, add the chopped tomatoes, slit green chillies, and curry leaves to the pan. Stir well and cook for 5-6 minutes until the tomatoes are soft and mushy.
  • Add the red chilli powder, turmeric powder, coriander powder, cumin powder, and garam masala powder to the pan. Mix well and cook for 1-2 minutes until the spices are fragrant.
  • Add the tamarind pulp and 2 cups of water to the pan. Stir well and bring the mixture to a boil.
  • Add the lamb shanks to the pan and mix well. Cover the pan with a lid and cook on low heat for 30-40 minutes until the lamb shanks are tender and cooked through.
  • Check the seasoning and add salt as per taste. If the gravy is too thick, add some more water to it.
  • Garnish the Nalli Ka Salan with fresh coriander leaves and lemon juice. Serve hot with steamed rice or Indian breads.


  • You can also use mutton or beef instead of lamb shanks to make this dish.
  • If you don’t have tamarind pulp, you can use lemon juice or vinegar as a substitute.
  • If you like your food spicier, you can increase the number of green chillies or add some red chilli flakes to the dish.
