Here’s a recipe for Ney Appam that you can try at home:

Ingredients

  • 1 cup of raw rice
  • ½ cup of grated jaggery
  • 1 ripe banana
  • ½ teaspoon of cardamom powder
  • 1 tablespoon of ghee
  • ½ cup of water
  • Oil for frying

Instructions:

  • Rinse the raw rice and soak it in water for 4-5 hours. Drain the water and grind the rice to a smooth batter in a blender or grinder. Add ½ cup of water to the rice while grinding.
  • Mash the ripe banana and add it to the rice batter. Mix well.
  • Add grated jaggery to the batter and mix well. Ensure that the jaggery is well mixed into the batter.
  • Add cardamom powder and a tablespoon of ghee to the batter and mix well. Let the batter rest for 30 minutes.
  • Heat a paniyaram pan or an appam pan over medium heat. Add a few drops of oil in each cavity of the pan.
  • Once the pan is heated, pour the batter into the cavities of the pan using a ladle. Do not fill the cavities completely as the appams will puff up when they are cooking.
  • Cook the appams for 2-3 minutes on one side until they turn golden brown. Flip the appams over and cook for another 1-2 minutes.
  • Remove the appams from the pan using a skewer or a fork.
  • Serve the Ney Appams hot with tea or coffee.

Tips

  • Ensure that the batter is not too thick or too thin. It should have a pouring consistency.
  • Use ripe bananas for best results. 
  • You can add grated coconut to the batter for extra flavor.
  • If you do not have a paniyaram pan or an appam pan, you can use a regular frying pan to make the appams.
  • You can store the Ney Appams in an airtight container for up to two days.
