  • 1 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • Salt, to taste
  • Water, as needed
  • 4 eggs
  • 1 onion, finely chopped
  • 1 green chili, finely chopped
  • 1/4 cup frozen peas, thawed
  • 1/4 cup chopped carrots
  • 1/4 cup chopped potatoes
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon coriander powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • Salt, to taste
  • Vegetable oil, for deep frying


  • Start by making the pastry for the samosas. In a large mixing bowl, combine the all-purpose flour, vegetable oil, and salt. Mix well until the ingredients are well combined. Gradually add water to the mixture and knead the dough until it becomes smooth and pliable.
  • Cover the dough with a damp cloth and set it aside for 30 minutes to rest.
  • While the dough is resting, prepare the filling for the samosas. Heat a tablespoon of vegetable oil in a pan over medium heat. Add the chopped onions and green chili to the pan and sauté until the onions become translucent.
  • Add the chopped potatoes, carrots, and peas to the pan and stir well. Cook the vegetables until they become tender.
  • Add the cumin powder, coriander powder, turmeric powder, red chili powder, and salt to the pan. Stir the spices into the vegetables and cook for 1-2 minutes until fragrant.
  • Crack the eggs into the pan and stir them into the vegetable mixture. Cook the eggs until they are set, but still slightly runny.
  • Remove the pan from the heat and let the mixture cool down.
  • Preheat the oil for deep frying in a large, heavy-bottomed pot over medium-high heat.
  • Divide the dough into small balls and roll each ball out into a thin circle.
  • Cut the circle in half and shape each half into a cone. Seal the edges of the cone with a little water to create a pocket for the filling.
  • Spoon a tablespoon of the egg and vegetable mixture into each pocket and seal the top of the pocket with a little water.
  • Repeat this process until all the dough and filling are used up.
  • Once the oil is hot, carefully add the samosas to the pot in batches. Fry the samosas until they are golden brown and crispy.
  • Use a slotted spoon to remove the samosas from the oil and transfer them to a plate lined with paper towels to absorb any excess oil.
  • Serve the egg samosas hot with your favorite dipping sauce.
