  • Wash and chop the betel leaves into small pieces.
  • In a blender, add the soaked nuts, betel leaves, fennel seeds, black pepper powder, cardamom powder, and saffron strands. Blend them until they become a fine paste.
  • In a pan, heat the milk and water over medium heat. Add sugar and stir until it dissolves completely.
  • Add the nut and betel leaf paste to the pan and stir well. Cook for 5-10 minutes over medium heat, stirring occasionally.
  • Remove the pan from the heat and let it cool for a few minutes.
  • Once it cools down, strain the mixture through a fine-mesh sieve to remove any solids. Make sure to press down on the solids to extract all the flavors.
  • Add rose water to the mixture and stir well.
  • Chill the Paan Thandai in the refrigerator for at least an hour.
  • To serve, pour the chilled Paan Thandai into glasses filled with ice cubes. You can also garnish it with chopped nuts and betel leaves.

Tips

  • Make sure to soak the nuts for at least 2 hours to make them soft and easy to blend.
