    • 1 cup milk
    • 1 cup water
    • 4-5 betel leaves
    • 1/4 cup almonds
    • 1/4 cup cashews
    • 1/4 cup pistachios
    • 1/4 cup melon seeds
    • 1/4 cup poppy seeds
    • 1/4 cup fennel seeds
    • 1/4 cup rose water
    • 1/2 tsp black pepper powder
    • 1/2 tsp cardamom powder
    • 1/2 tsp saffron strands
    • 1/2 cup sugar
    • Ice cubes

  • Soak almonds, cashews, pistachios, melon seeds, and poppy seeds in water for at least 2 hours. Drain the water and set aside.
  • Wash and chop the betel leaves into small pieces.
  • In a blender, add the soaked nuts, betel leaves, fennel seeds, black pepper powder, cardamom powder, and saffron strands. Blend them until they become a fine paste.
  • In a pan, heat the milk and water over medium heat. Add sugar and stir until it dissolves completely.
  • Add the nut and betel leaf paste to the pan and stir well. Cook for 5-10 minutes over medium heat, stirring occasionally.
  • Remove the pan from the heat and let it cool for a few minutes.
  • Once it cools down, strain the mixture through a fine-mesh sieve to remove any solids. Make sure to press down on the solids to extract all the flavors.
  • Add rose water to the mixture and stir well.
  • Chill the Paan Thandai in the refrigerator for at least an hour.
  • To serve, pour the chilled Paan Thandai into glasses filled with ice cubes. You can also garnish it with chopped nuts and betel leaves.
  • Your Paan Thandai is now ready to be enjoyed!

  • Make sure to soak the nuts for at least 2 hours to make them soft and easy to blend.
  • Adjust the sugar according to your taste preference.
  • If you don’t have access to fresh betel leaves, you can use betel leaf powder instead.
  • You can also add a few drops of green food coloring to give the drink a more vibrant color.
  • If you want to make it vegan, you can use plant-based milk such as almond milk or soy milk instead of cow’s milk.
