For Bhatura:

  • 2 cups all-purpose flour
  • 1/2 cup semolina
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup yogurt
  • 1/4 cup milk
  • Oil for frying

For Paneer Gravy:

  • 200g paneer, crumbled
  • 2 onions, finely chopped
  • 1 tomato, finely chopped
  • 1 green chili, finely chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/4 tsp garam masala powder
  • Salt to taste
  • 1 tbsp oil
  • Fresh coriander leaves for garnishing


For Bhatura:

  • In a mixing bowl, combine all-purpose flour, semolina, salt, sugar, baking powder, and baking soda.
  • Add yogurt and mix well.
  • Add milk gradually and knead the dough. The dough should be soft and pliable.
  • Cover the dough and let it rest for 2 hours.
  • After 2 hours, divide the dough into small equal-sized balls.
  • Roll out each ball into a round shape, about 5-6 inches in diameter.
  • Heat oil in a deep frying pan over medium heat.
  • When the oil is hot, add the rolled bhatura and fry until golden brown on both sides.
  • Remove from oil and place on a paper towel to remove excess oil.

For Paneer Gravy:

  • Heat oil in a pan.
  • Add cumin seeds and let them splutter.
  • Add chopped onions and fry until they turn golden brown.
  • Add ginger paste, garlic paste, and green chili. Fry for 1-2 minutes.
  • Add chopped tomatoes and fry until they become soft and mushy.
  • Add coriander powder, turmeric powder, red chili powder, and salt. Mix well.
  • Add crumbled paneer and mix well.
  • Add 1/4 cup of water and bring the mixture to a boil.
  • Reduce heat and simmer for 5-7 minutes until the gravy thickens.
  • Add garam masala powder and mix well.
  • Garnish with fresh coriander leaves.

  • Serve the hot and crispy bhaturas with the creamy paneer gravy.
